The minimum possible quantity of sugar syrup is added, which is only sufficient to bring the mixture to a paste consistency; that is why, our Antep pistachio delicacies do not taste too sweet.

More Info:
The pistachio (Pistacia vera) is a small tree member of the cashew family. The pistachio tree is native to a geographical region spanning from Southeastern Anatolia in present day Turkiye to Central Asia encompassing areas in present day Iran and Afghanistan. The tree can reach a height of up to 33 ft (10 m) and may live up to 300 years. Pistachio harvest is greater in alternate years and peak yield is attained when the tree is around 20 years old. The pistachio nut is actually a fruit composed of a hard, cream-coloured exterior shell that envelops an elongated seed. When the fruit becomes ripe the exterior shell splits partially open, exposing the seed that is the pistachio kernel we all know.
There are different pistachio varieties out there. However; far in the Gaziantep region in Southeastern Anatolia, the rich soils, optimum altitudes, dry climates, short cold winters and long hot summers work in cadence so as to eventually provide us the premium-quality Antep pistachios with their unique, subtle flavour that is second to none.
Our purveyor Tahmis has been roasting Antep pistachios to perfection since 1635. There is an art to roasting Antep pistachios while, at the same time, preserving their intrinsic, exquisite flavour.
